Since about 2005, I've left my camera date/time in UTC, so that I don't need to adjust it for time zones / daylight savings. Once you reach Australia, it's 10 or 11 hours out of sync with local time. Unfortunately the Exif format doesn't provide a way to declare the time zone, except for the GPSDateStamp field which is required to be in UTC.
